Aquavit is a wonderful thing but unfortunately many have a less then enjoyable taste. To address this issue my friend Tobias Alrøe and I decided to make our own. Because of the time of year when we started making the aquavit, we decided to use elderflower as a basis for our aquavit.

We made two different combinations.

Elderflower and Lemon

For the first one we decided on using elderflower and lemon as a base.

Recipe

  • ½ liter of Aalborg basis (a mild neutral 35% spirit)
  • 50g of elderflower (without stalk as this is poisonous)
  • The zest from 2 organic lemons (the colorful portion of the peel)
  • 2 slices of organic lemon
  • 1 tablespoon of organic honey

Start mixing the ingredients in an appropriate container. simple add the elderflower, followed by the grated zest from the lemons and then the lemon slices and honey.

After mixing all the ingredients in the container add the spirit and store the mix for a couple of days.

Finishing

After a couple of days filter the mix into a bowl and add

  • 1 tablespoon of organic honey

The aquavit is now ready to be bottled and enjoyed. The final product has a strong taste of elderflower with a hint of lemon.

Elderflower and Rhubarb

The second combination was made using elderflower and rhubarb as a base.

Recipe

  • ½ liter of Aalborg basis (a mild neutral 35% spirit)
  • 100g of elderflower (without stalk as this is poisonous)
  • 1 Rhubarb stalk

Slice the rhubarb into small pieces and mix it together with the elderflower and spirit. Now store for a couple of days.

Elderflower and Rhubarb aquavit mixed

Finishing

After a couple of days filter the mix into a bowl and add

  • 3 tablespoon of sugar

The aquavit can now be bottled and enjoyed. The aquavit has a strong taste of elderflower but with little taste of the rhubarb.
